Our Ali Shan Oolong is categorized as a high-mountain tea, or gan shan cha, because it is grown at an elevation of 1000 meters or higher. The features of Ali Shan Oolong are their strong floral aroma combined with sweet-smelling sugary scent upon infusion. The best way to enjoy the aroma is to use the scent cup. For the lightly roasted or baked Ali Shan Oolong, we suggest steeping with 90°C hot water. For the medium roasted Ali Shan Oolong, we suggest steeping with slight higher water temperature of 90°C-95°C. For the heavy roasted Ali Shan Oolong, we suggest steeping with water temperature of 95°C or higher.
